It is being reported that prepackaged meats are now being packed in CARBON MONOXIDE gas to keep it from changing color as it SPOILS.

The gas does not stop spoilage, it only conceals visible signs of it. The Washington post ran a picture of two packages of meat, on in air and one in CO. Each package was inoculated with E. Coli and allowed to "mature." The one packed in air turned green, the one in CO stayed pink.

This is because CO bonds it a protein in meat, turning it irreversibly pink.
